Along the stretch of that goes inland, parallel to the coast, from Ventimiglia to Cervo in Imperiese, many families of winemakers working for the winery Foresti grapes that give rise to the typical wine of the sea. Straw yellow with golden hues, is the intense and persistent, fine and elegant, with hints of fresh herbs and flowers of field and slight mood of forest. Dry, fruity, slightly warm, with a pleasingly bitter is to be drunk young, while we know endure a medium aging.

WINEMAKING: skin maceration at room temperature for about 12 hours. Clarifying of the cold must with selected enzymes. Fermentation at controlled temperature (18 degrees) with yeast products in the company from grapes

AGING: in stainless steel tanks for 5 months, 3 of which "sur lie"

WORKING: assisted malolactic fermentation, clarification with gelatin, cold stabilization and bottling sterile

Alcohol: 12%

EXTRACT DRY: 19 per thousand (net) minimum

 

Grapevine VERMENTINO

Historical references
The origins of vermentino seems to be located in the Iberian peninsula, in close connection with the genetic strain of the variety relating to the "malvasia"; these varieties are then disseminated throughout the northern coast of the Tyrrhenian Sea, from southern France to Tuscany, Sardinia and Corsica, assuming different names in the growing areas.
Dissemination and importance
Vermentino is the only grape spread evenly across the Ligurian coast, from Ventimiglia to Sarzana, and along with Pigato is by far the most produced wine in Ligury. In province of Imperia this grape variety is commonly cultivated throughout the coastline: in the extreme west vegetate mixed to cultures of Rossese Dolceacqua;
extensive crops and new specialized establishment instead are found in the district Imperia, starting from ones from Porto Maurizio, and in the ImperoValley especially in the vines of Dianese, S. Bartholomew and Cervo.
Notes cultivation
Vermentino adapts well to the chalky soil and relatively poor, even if it provides the best productions in the average fruitful soils and cool, as long as not too wet.
The forms of breeding can vary from tree, typical of most winemakers anchored to tradition, to low espalier, widely used in new installations.
The pruning is always short, given the high degree of fertility of basal buds. The planting density is around 4500 plants per hectare, while production normally exceed 2 kg per vine.
The commercial ripening and harvesting take place normally in the second half of September.
Vinification
Vermentino is produced almost exclusively in white, or in the absence of solid parts of the bunch.
On the contrary, the transformation provided a partial traditional red wine making, with the presence of the skins during fermentation, this practice is now restricted to family and consumer.
In the area of manufacturing companies and oriented to be sold on the domestic and foreign markets, those that produce vermentino and other fine white wines are best equipped for the technology and the most advanced in the application of modern winemaking practices.
Enhance quality
Vermentino is included in the DOC "Riviera Ligure di Ponente", along with Pigato and Dolcetto Ormeasco; is a single wine - grape obtained using at least 95% grape varieties of the same name, according to the instructions contained in the product. Companies in Eastern Europe with production and sale all belong in the directory of the DOC, according to the rules of production, vinification and controls established by law. Most companies in the production phase,also applies the regulation "Agroambientale" of Liguria Region.
Organoleptic
Straw yellow with golden hues, delicate aroma, and distinctive fruity taste dry, fresh, harmonious and delicately fruity.
