Sauces and preserves traditional Ligurian

When it comes to sauces and preserves, in the traditional Ligurian are mentioned sauces as the Genoese pesto, walnut sauce, and dried tomatoes in oil. Are no less but preserved as artichokes sauce and other sauces that we present on these pages. 

They are mades to taste, rich flavor and sun, ingredients of which it is  rich our Liguria. 

These sauces are just to season the pasta, accompanied seconds of meat or fish, are well placed to prepare delicious canapés and delicious appetizers.

Bruschetta

As simple to prepare and in ingredients as excellent. Specifically designed for the bruschetta, the delicate flavor of this sauce with tomato, bell pepper, olive oil and herbs of the maquis, is suitable to be used as a condiment for pasta.

Harissa

This typical spicy sauce originates from an ancient recipe Arab. Made up with added chilli garlic and coriander, with ethnic dishes such as Tajin and the cous cous as well as tasty appetizers and meats.

Artichokes paste

Pesto alla Genovese

With its recipe dates back to mid 800's, the pesto is a specialty of Liguria for Excellence and the cornerstone of the culinary tradition of this region. A base of typical products such as basil, olive oil and pine nuts, a sauce is born ready to season the pasta (trofie, trenette, gnocchi, lasagne) and dry (especially spaghetti). It 'a very good ingredient to flavor sauces tomato, meat, consommés.

Red pesto
