Beans of Pigna

This is what says the great French chef Alain Ducasse in his "Loving dictionary of Cuisine":
"The bean is probably one of my favorite vegetables, but I could hardly hide my preference for beans grown in Pigna, a village of the XV th century, located in Nervia valley, in Liguria, near Ventimiglia. My obsession, at the beginning of September, is to obtain some of them: are sold by weight of gold and I am not the only one on the market. Buy a pound of these beans Pigna sometimes proves to be a real adventure.(…) Seasoned with a thread of olive oil for give them more smoothness, scented with smells fresh, garlic, celery, rosemary and bay leaves, are delicious warm.
Blend beautifully with crumbled tuna, octopus or slices of chopped parsley.(…) I love them in their broth, soft, to which I add the raviolini of pecorino and ricotta from sheep. "
